  1. Sift flour, baking soda, baking powder, sugar. Mix well.
  2. Mix in buttermilk and vanilla, coconut oil. Do not over-mix. Let the batter sit for 10 minutes
  3. Heat a lightly oiled frying pan over low heat. Pour or scoop the batter onto the griddle, using approximately 1 soup spoon for each pancake. Brown on both sides and serve hot.
  4. Serve with fruits/honey/maple syrup/jam :)

Meanwhile, preheat a large non-stick frying pan over medium-low heat. Add half a tablespoon of butter, let it melt and spread around the pan. Add the melted butter to the pancake batter and return the pan to the stove. Mix the butter into the batter. When the pan is hot enough, pour a ladleful of batter on the pan for each pancake.
