The ingredients needed to make Mixed Fruit Cake:
Get wheat flour
Take Jaggery powder(nattu sakkarai)
Take mixed fruit juice
Prepare oil
Take cardamom powder

Get nutmeg powder,1/4 tsp or less dry ginger powder
Prepare baking powder
Get baking soda
Prepare Finely chopped Badam, cashew,chiroli about
Take Dates finely chopped
Take Black kismis
Get tutty fruity
Take Melon seeds
Instructions to make Mixed Fruit Cake:
Add 1 cup Jaggery powder in a wide bowl. Add chopped dry fruits, dates, black kismis (raisins),tutty fruity.
I made fresh mixed fruit juice at home. I made it using fresh black grapes, orange and pineapple. Add this mixed fruit juice to the jaggery and dry fruits mixture. Mix it well. Allow it to soak for at least 1 hour.If you have time can soak for 2 to 3 hours. I soaked it for 1 hour.I added 1/4 cup juice more as quantity of dry fruits I added is more.
After an hour, pre-heat a cooker. Add salt in it, place a plate and stand over it. Close it with the lid without gasket and whistle. Pre-heat it for 10 minutes on medium high flame. Grease the cake tin with oil and dust it with wheat flour. Remove extra flour.
In a wide bowl place a seiver on it. Add 1 and 1/2 cup wheat flour, dalchini powder,elaichi powder and a pinch or more dry ginger powder and nutmeg powder.
Now add 1 tsp of baking powder and 1/2 tsp baking soda.Now seive it and mix well. Now add the soaked Jaggery, fruit juice and dry fruits mixture to this. Add it in little parts by mixing it with the help of a spatula.
Slowly finish adding the juice mixture and check the consistency as shown in the pic below. Now add 1/3 cup of oil to this. Use a non flavoured oil like sunflower or rice bran oil. I used rice bran oil. Mix well with the spatula.
Now the consistency of the cake batter should be like semi thick. Like you take it on spatula it should fall like ribbon. Check the consistency of the batter as shown in the pic below. If the batter is thick you can add two tbsp of water. Now transfer this batter into the greased mould.Then tap it slowly.
Place the cake mould inside the pre- heated cooker carefully and close it with lid. Bake this at medium flame for about 40 to 45 minutes. After about 20 minutes open the cooker lid and garnish the cake with melon seeds and cashew. As once I garnished and then kept the cake to bake. The nuts all went inside so I used this method. Quickly close the lid. Then remove it exactly after 45 min.
Place a clean knife inside the cake, if it comes out clean then cake is baked perfectly. Allow it to cool and then remove it. See in the pic how nicely it is baked at the bottom.
