Discard the marinade and place three of the chicken pieces into the pre-heated pan. Fluff it up with a fork and stir through the coriander and lime zest. Divide the rice between two bowls. Cut the chicken breasts into slices and place on top of the rice.

  2. Brown chicken on griddle pan or render chicken skin for 3-4 minutes or until you like the colour (on presentation side only). Then cook it in the oven for 8-12 minutes depending on how thick your piece of chicken is.

Divide the rice between two bowls. Cut the chicken breasts into slices and place on top of the rice. Add the char-grilled peppers and onion and top with the chopped avocado.
