  2. Move veggies to one side of the wok. Crack eggs into the other side of the wok and scramble. Cook.
  3. In a separate pan cool the chikcent and add to the veggies.
  4. Stir in the rice, peas, corn and soy sauce. Cook.
  5. Serve.

Stir in chicken, salt and pepper. Add eggs and vegetables; heat through, breaking eggs into small pieces and stirring to combine. Fried rice is best made with leftover rice that's at least a day old. Otherwise it becomes gummy in the skillet. If you don't have any leftover rice from the night before, cook a batch of rice and spread it on a large baking sheet or several large plates.
