But thanks to my friend Albar's recipe for boneless chicken biryani, I was finally able to overcome my fear for preparing what maybe the sub-continent's most iconic dish. This version is simplified, with just two layers—marinated chicken thighs and parboiled basmati—cooked together in a heavy-lidded dutch oven to keep all the steam (and flavor) locked in.

Instructions to make Chicken boneless biryani:
  1. Blend the tomatoes, garlic and green chilli in a blender make a paste.
  2. Add ghee or oil in a pan heat the oil first then add all the dry spice in the pan and stir it for 30 seconds then add chicken add stir that for 10 minutes.
  3. Then add all the blend mixture in that and add lemon, pickle aswell red chilli and salt.
  4. Now add 2 cups of water and leave it for boiling on medium flame.
  5. When the water is boiling properly then drain the rice and add in that boiling water make sure no excess water go in there and add yellow food colour.
  6. Then leave it on high to medium gas until the water gets dry but make sure u mix the rice during this process when the water gets dry leave it on very low flame and put the lid on top for 15 minutes. If you think your rice its still not done you can add bit of water and leave it on low flame. Enjoy the rice with salad.
