Add the soy sauce, kecap manis and Shaoxing wine and stir until well combined. Stir in the basil leaves, then serve with steamed jasmine rice.   1. Cut the chicken into chunks and place in a mixing bowl. Add corn flour over the chicken. This will tenderise the meat and also thicken the sauce. Mix well and set aside for later.
  2. Cut the vegetables and place on a plate and set aside.
  3. In a wok on high heat, add cooking and 2/3 of the sesame oil. Let the oil heat up and then add ginger slices. Cook for a minute stirring to avoid burning the ginger. Then add the chicken and cook to colour and brown the outside.
  4. Once chicken has slightly browned add the onions, garlic and spring onions and stir to infuse all if the flavours. Stir-fry for a few minutes and add the fresh chillis. Cook for a further minute and then add the peppers and mix again. Keep stirring. Cook for another 2 minutes.
  5. Then it’s time to deglaze the pan. Add the cup of Shaohsing wine, light soya sauce, rest of the sesame oil, a touch of sugar and stir. Once sugar has dissolved taste the sauce. Taste and adjust sauce as needed (add sugar, soya sauce, shaoshing etc.). Once peppers and onions have soften to desired consistency turn heat to medium low.
  6. Lastly add the basil leaves to the wok and stir together. Cook for a minute. Then transfer to serving bowl.
  7. Serve immediately while hot and eat with steamed rice.
