Instructions to make Mutton Kofta Gravy:
Combine the mince meat with salt and pepper powder. Keep aside.
Heat the oil and add the cloves and cinnamon. Once they release the aroma, add the chopped onions. Sprinkle little salt on top and fry on medium till it turns golden.
Add the ginger garlic paste and cook till the raw smell is gone and oil starts to appear on the sides. Sprinkle the coriander powder and turmeric powder and let it cook for a few more mins.
Add the chopped tomatoes and cover it. Take out 1 tbsp of this masala mix and add to the minced meat.
Whip the yogurt till very smooth and add to the pan. Make sure the flame is kept low at this point. Stir the whole mixture and add 1-1/2 cups of warm water to this. Mix, season and cover. Let it come to a boil while we make the koftas.
Make small sized balls from the mince meat. Heat oil in a frying pan and gently place the meat balls in the pan. Fry for 3-4 mins till the meat turns brown.
Take them out and carefully add to the simmering gravy. Once the balls are fried, add the remaining oil to the gravy. Let it cook for 25-30 mins or till the mutton is cooked.
Mix in the garam masala and the ghee. Serve hot!
