The ingredients needed to make Pumpkin Compote:
Prepare pumpkin, peeled and cut into pieces.
Take granulated sugar
Prepare cinnamon stick, (I added 2 sticks)
Prepare Orange peel, grated
Take vanilla extract
Steps to make Pumpkin Compote:
Cook the pumpkin in water for around 30 to 40 minutes. You want it soft enough to be able to mash it.
When cooked drain the pumpkin in a sieve for a good while. Then mash well making sure there is no lumps.
Add the mashed pumpkin back into the sieve. The pumpkin will hold a lot of water so you want to lose as much of that water as possible. I used a good amount of kitchen roll to squeeze some of the water out of the pumpkin.
On a medium to low heat, In the same pan used to boil the pumpkin, add all the above ingredients including the mashed pumpkin.
Simmer for about 20-25 minutes. Stirring regularly ensuring it's not sticking to the bottom.
When it's cooked through remove the cinnamon sticks
Transfer the compote to a sterilised glass jar, leave the lid off until its completely cooled off.
Seal and store upto 1 month in a cool dry place.
