Reading it back to myself, I think I copied it verbatim from my mum's instructions. First, add butter, sugar, salt and water in a thick-bottomed pan and bring it to a boil. Then remove the pan from the heat and add in sifted cocoa powder and flour. Bring it back to the heat.

  1. Preheat the oven to 200C / 180C Fan / 400F and grease 2 baking trays or line with baking paper.

  5. Whisk cream until thick add icing sugar and orange essence and whisk again. Fill each bun generously.
  6. Put the choc, butter and waterin bowl over hot water and melt. Don't let the bowl touch the water. When melted beat in icing sugar. Spoon over buns.
