Instructions to make Thepla Quesadillas:
For Thepla - in a bowl add Ata, washed and chopped Methi leaves, sesame seeds, red chilli powder, coriander powder, turmeric powder, oil, yogurt, salt, garlic paste and make a dough. Keep it covered with a wet cloth for 10 mins
Pinch lemon size balls and with a rolling pin make a Thepla.
In a tawa in gas heat and add the Thepla. Roast on both sides and do it for other one.
Add oil to fry on both sides and set aside
For Filling - pressure cook the Rajma on high flame for 5 whistles. Set aside and drain the water
In a wok heat oil and add garlic paste. Fry until a good aroma is there. Add chopped onions and fry until onions are soft. Add tomatoes and fry until tomatoes are mushy
Add boiled Rajma, chilli paste, chilli sauce, tomato ketchup and grated cheese. Cook well so as to mix everything. Set aside
Take half of the filling and place on one half of Thepla. Fold the other half and cut into half.
Plate putting the Thepla on one side, lettuce leaves on the other, roasted Papad cut, coriander leaves, red chilli cut, cucumber rolls and Tomato Salsa. Enjoy
