Instructions to make KFC-style Cauliflower Nuggets and Coleslaw:
Chop the cauliflower into bite-size florets.
Beat the eggs. Add the flour, breadcrumbs, salt and spices. Mix and slowly add the water until your batter is the right consistency.
In a large, deep pan heat up the oil. Dip the cauliflower florets into the batter and drop in the oil. Be really careful here about dropping them in. I find that using a spoon to place the cauliflower into the oil helps. Gently fry the nuggets until they become golden-brown.
To make the coleslaw finely slice the red cabbage into thin strips (the thinner the better, sometimes I use a potato peeler). Peel the carrot and grate it. Slice the spring onion. Add to a large-mixing bowl. Juice the lime and add it to the chopped vegetables.
Add the mayonnaise to the bowl with the vegetables and mix. Don't aim for mass amounts of mayonnaise but the lime-juice should mix it down to evenly coat the vegetables. Add salt, pepper and a sprinkle of sugar to taste.
Enjoy! I served mine with focaccia bread and spinach to make a sandwich, they would also be yummy on their own with a sauce to dip them in, or as a side-dish to another meal 😋
