Take 1 big tin of Coconut milk
Make ready 2-4 leaves Kaffir lime leaves for garnishing thinly shredded
Prepare Red chili pepper for garnishing seedless and thinly sliced 1 whole
Get 1 tbsp Vegetable oil
Get Fish sauce 1-1Β½ tbsp or soy sauce if vegans 1-2 tbsp
Take Palm sugar 2 tbsp (brown sugar is fine too)
Take Zoodle
Make ready 2 courgette, julienned or use spiralizer to make a long noodle cut
Instructions to make Red curry Salmon with zucchini noodles π π£:
On medium heat add some vegetable cooking oil and fry salmon fillets skin side down first for 5 min then turn over and cook the other side until well done. Leave it aside.
Heat about 2-3 tbsp of coconut milk in the same saucepan over a high heat until coconut milk starts bubbling. Add the red curry paste and stir-fry for 1-2 minutes, or until fragrant.
Then add palm sugar, fish sauce or soy sauce Simmer for about 5 minutes. Taste and adjust the saltiness by adding more fish sauce or soy sauce if preferred. Add a few tbsp. of coconut milk and stir well. Add salmon back into the curry and let it simmer.
Julienned courgette or use spiralizer to make your courgette to noodles shape.
1. Blanched your courgette with hot water for a few minutes then drained and squeeze the water off. Leave it aside (this to serve with salmon red curry)
To serve, place the salmon chuu chee curry or red curry in a large bowl. Garnish with red chilli and finely chopped kaffir lime leaves. Serve with zucchini noodles or you can called it zoodle
