Saute onion in a medium-sized pot until translucent then add ginger, garlic and spices. I like using Garam Masala and Turmeric but you can use any Indian spices you have. Curry powder, Cardamom, Cumin, Coriander, etc. will all work well. Add the rice and a pinch of salt and stir to coat in the spices then pour in the water or stock.

Combine all ingredients in a saucepan. Cover and reduce heat to low. In a large pot over medium-high heat, heat oil. Stir in the fish sauce, brown sugar and lime juice.

Steps to make Basic Curry Rice:
  1. Cut the vegetables and meat. Oil a heated large saucepan or pot, cook meat, then add the vegetables and mix together. - *Note: I like to add a bit of grated Garlic & Ginger when I first stir fry the meat as it adds a nice flavour.
  2. Add water and cook on medium heat until vegetables are tender.
  3. Add Curry Raux blocks and simmer on a low heat. Add extra Water if too thick. The longer you simmer, the richer the flavour.
  4. Serve on a plate with freshly cooked rice.

In a large pot over medium-high heat, heat oil. Stir in the fish sauce, brown sugar and lime juice. Serve over rice, zoodles, or even. spaghetti squash!; Possible Variations: Vegetarian yellow curry: Omit the chicken then either add extra vegetables, or substitute pan fried tofu. Making curry rice is easy even if you don't know how to make rice already. The basic process involves frying a few simple vegetable ingredients, then cooking them with the rice and seasonings in water until it is pleasantly soft and fluffy.
