  1. Fry the onion and garlic in oil on medium heat for 5 mins, then add the vegan mince. Cook for a further 10 mins, stirring often, whilst you chop the remaining vegetables. If mince starts to stick then add some hot water
  2. Add in the pepper, courgette and mushrooms and cook for another 5-10 mins, stirring often.
  3. Pour in the tinned tomatoes, and season with mixed herbs and thyme. Cover with a lid then turn the heat down to low.
  4. Boil the spaghetti for 10mins whilst the bolognese cooks, then drain and serve with the bolognese sauce
  5. Store the remaining bolognese in tubs for the fridge/freezer

Bolognese is one of the spaghetti sauces I love. I just loved the meatiness of the sauce, and we used to be able to buy it for school. I am so having this is very nostalgic and exciting, especially when the TVP really does taste like minced meat. I loved the extra flavors brought by the red wine, but you don't. Meanwhile, cook the spaghetti following pack instructions until al dente.
