The ingredients needed to make Wheat burfi (Gol papadi):
  1. Prepare 1 cup Whole Wheat Flour
  2. Make ready 4 tbsp gram flour
  3. Make ready 1/3 cup Gund
  4. Get 1/2 cup Jaggery
  5. Make ready 1/2 cup ghee
  6. Make ready 3 tbsp desiccated coconut
  7. Prepare 1 tbsp pistachios powder
  8. Make ready 2 tbsp poppy seeds(khus khus)
  9. Make ready Topping
  10. Take As required Coconut

Sukhdi recipe - Authentic Gujarati sweet made with jaggery (gur or gol), ghee (clarified butter), and atta (whole wheat flour). In Gujarat, it is known as Sukhdi. While it is called gur papdi or gol papdi in Maharashtra. Gur Papdi is a traditional sweet recipe made specially during winters.

Steps to make Wheat burfi (Gol papadi):
  1. For gol papadi
  2. To begin making the Golpapdi Recipe (Gol Papdi/ Sukhdi), melt the ghee in a frying pan.
  3. Mix wheat and gram flour.
  4. Add the wheat flour mixture and stirring constantly till it turns slightly golden
  5. Add pistachios powder, coconut and gund in the gol papadi. Mix well.
  6. Add kush kush and mix well.
  7. It will release roasted aroma. This process takes about 10 minutes on medium heat. Ensure the heat is not on high as it will burn the wheat flour too quickly.
  8. Once the wheat flour has turned a good brown color, turn off the heat and quickly add the jaggery and stir well, so the jaggery melts quickly in the heat.
  9. Note: The addition of jaggery to the wheat flour mixture is a tricky procedure. The whole mixture can get brittle and gooey. So use caution, and turn off heat just before adding jaggery.
  10. As soon as the jaggery melts, and the mixture is still warm, pour the mixture into a deep plate and apply ghee and
  11. Spread it evenly with a 3/4th inch thickness.
  12. Sprinkle the coconut and cut into diamond/square shapes while it is still warm.
  13. Let it cool cool down
  14. Gol papadi

While it is called gur papdi or gol papdi in Maharashtra. Gur Papdi is a traditional sweet recipe made specially during winters. This amazing combination of jaggery and wheat flour make a delicious sweet treat to feast on. You can have Gor Papri on special or festive occasions or have it whenever you crave something sweet. This sweet is also called as Sukhadi or Gol Papdi in some parts of India.
