  16. Prepare 1/2 tsp nigella seeds/ kalojeera
  17. Get 3 tbsp White oil
  18. Make ready 1 tsp salt
  19. Take Others
  20. Prepare Oil for frying

The crust on these samosas was nice and crisp, without tasting too oily. Samosa and Chole (chickpeas curry style) was hearty. I think the Chole can stand on its own. Alu Gobi (Cauliflower with potatoes and spices) was also excellent - great texture on the vegetables.

Steps to make Alu-Gobi Samosa:
  1. Cut the veggies properly…. tempting them with white oil and salt. Cooked it with cover for 10-15 minutes and when it will be cooked lil bit then added turmeric powder, cumin powder and Bhaja Masala. Stirring them for few minutes.
  2. Keep aside for Cooling those veggies. Now make a dough… it'll be lil bit tight dough.
  3. Rolled the dough like picture…cut it from middle. Make a kone & stuffed with veggies. Sealed it and shaped it like Samosa.
  4. Fried them into deep frying oil. At last served them with Coriander Chutney & Masala tea.

I think the Chole can stand on its own. Alu Gobi (Cauliflower with potatoes and spices) was also excellent - great texture on the vegetables. Traditional Indian dish made of spiced cauliflower and potatoes. This dish is steamed and then fried in oil making it intentionally dry and somewhat crispy. WARNING: This dish is extremely spicy, which is the way I like it.
