In traditional Indian cuisine, they are deep-fried (and that is still and option). Beef and potatoes are the main ingredients folded inside these wonderful deep fried samosas. Chicken livers may be substituted for beef, if you choose. My friend from Bangladesh gave me this savory, spicy recipe.
Instructions to make Samosa:
Take Maida, salt and carom seeds in a bowl. Then mix them well.
After mix add refined oil (1/4 Cup). Again mix the oil with flour by using hands.
Mix till flour bind and hold shape in hand. Now the texture is perfect.
After that add cold water as required. Knead a tight dough and then rest that dough for 30 minutes.
Heat cooking oil (4 tbsp) in a pan. Then add hing, chopped onion and chopped green chillies.
Saute it for 2 to 3 minutes. Add salt, turmeric powder and coriander powder in it.
After 2 to 3 minutes, add Green peas. Cook the green peas for 1-2 minutes.
After 2 minutes, add boiled and mashed potatoes. Then mix them well.
After mix add cumin powder, red chilli powder, chat masala, black pepper powder, salt, chopped coriander leaves and garam masala powder. Mix them well. Now switch off the flame and let it cool down.
After 30 minutes,knead the dough again for 1 minute. Then make small ball size dough from that large sized dough.
Take a dough, apply some flour over the dough and then roll oval (slightly thick).
After oval shape, cut them into half.
Take half portion, rub water on the edge. After that join edges.
Press and Seal the edges properly. Give it cone shape.
And then add Samosa stuffing tightly. Rub water on the corner and then seal ends properly by pressing.
Now cover the samosa by using cotton clothes.
Heat oil in a pan for frying. Add Samosa to the hot oil.
Fry samosa uniformly in low flame.
Fry Samosa till Golden and crisp. After that remove them from hot oil and then ready to serve.
