The ingredients needed to make Apple and speck risotto:
  1. Get 350 g risotto rice
  2. Get 1 apple
  3. Make ready 1 packet speck
  4. Get Small chopped onion
  5. Prepare 1-1.2 litres hot stock
  6. Prepare Good amount of Parmesan
  7. Take Knob or two of butter
  8. Make ready to taste Salt
  9. Prepare Glug of white wine
  10. Make ready Olive oil
Steps to make Apple and speck risotto:
  1. Fry onion gently in olive oil. When softened, add rice and cook for a couple of minutes. Add wine and let it evaporate. Then add about 3/4 of the stock, Salt and then simmer
  2. Meanwhile, peel and chop apple into half centimeter cubes. Chop the speck if not already chopped. After 10 mins, add both to the risotto. We want the apple stewed but still whole
  3. Simmer and stir for another 10 minutes. Add more stock if needed. Right at the end of cooking time, add butter and Parmesan. Stir until creamy. Serve with more Parmesan πŸ˜€πŸ˜€πŸ˜€
