  5. Get or substitute with rice Ketupat cake(from the Asian supermarket)
  6. Take 500 g Shin beef/1kg chicken wash first,cut into small pieces
  7. Make ready 1.5 lt. boiled water from the kettle
  8. Get 200 g Bean curd:cut in 4, then slice&cut 1.5cmx2.5cm, then fried
  9. Take 6 boiled eggs:boil 6' in salted water then peeled under cold tap
  10. Take 500 g white Chayote peeled,cut into matchstick (see image), then
  11. Get sprinkle salt over the sticky oil of the coyote, then rinse
  12. Take (or substitute w/ jackfruit cut into bite pieces; see image)
  13. Prepare 250 g french beans, cut into 4cm pieces, steam cook 18' or
  14. Take 1/4 cabbage,cut roughly.Blanched 3' in saucepan with 2 Tbs water
  15. Prepare 2 carrots cut to matchsticks
  16. Take 2 fresh tomatoes cut into small cubed
  17. Get 4 cm fresh ginger
  18. Prepare 5 cm fresh galangal or 1 tsp galangal powder
  19. Take 4 cm fresh turmeric or 1 tsp turmeric powder
  20. Get 2 stalks lemongrass, crush at the white part, tied up on top
  21. Prepare 6 kaffir lime or lemon leaves
  22. Take 4 pcs bay leaves
  23. Prepare 5 candle nuts or 8 macadamia nuts
  24. Make ready 8 fresh red chilies for the paste(extra 4 red chillies to dice)
  25. Prepare 10 red shallots
  26. Take 7 cloves garlic
  27. Prepare 1 tbs round coriander or 1/2 tsp coriander powder
  28. Prepare 1/2 tsp ground nutmeg
  29. Get 1/4 tsp ground cinnamon
  30. Prepare 1/2 tsp ground kencur
  31. Get 700 ml coconut cream milk
  32. Get 1 tsp white pepper powder or 1 tbs black pepper grinded
  33. Make ready 2 tbs Java Coconut sugar that has dark brown colour
  34. Get or 2 tbs Palm sugar
  35. Make ready 3 cubes bouillon chicken or bouillon beef powder
  36. Take 2 tsp salt
  37. Make ready 3 tbs Rice Bran oil
  38. Get Ketupat cake (compressed rice) or Lontong rice cut into chunks
  39. Make ready Top dish:
  40. Make ready 1 med Onion chopped finely then fry in 2tbs oil untill darkbrown
  41. Get Kerupuk merah (cracker red chips)
Steps to make Mom's Lontong Sayur aka Padang ๐Ÿฒ ๐Ÿ˜๐Ÿ‡ฎ๐Ÿ‡ฉ:
  1. Put in food processor shallots, 8 red chillies, garlic, candle nuts, ginger,galangal,turmeric,rounded coriander and process till forms a smooth spicy paste.
  2. In a very large wok put a little oil, put the spicy paste, kaffir lime leaves, bay leaves,lemongrass and stir fry for 4 minutes or until smell an aroma fragrance shows up and run out the oily from the leaves.
  3. Then add the beef or chicken pieces, water& coconut cream milk enough to cover, add the spicy paste,french beans (or cabbage), chayote,carrots,tomato,coconut cream, bouillon beef or chicken cubes,salt,Java coconut sugar,white/black pepper, diced chillies, kencur, nutmeg,cinnamon powder. Mix all and cook slowly in a medium heat untill it boil,then add the fried bean curd,boiled eggs &cook 2' more then turn down the heat,let it simmer,cook 5', turn&mix until the meat is tender. Taste the season.
  4. To serve: on each individual plate, put on top base the rice Lontong cut into thick biscuit pieces or Ketupat cake chunk pieces, then on top of them pour over the cooked veges-meat mixture, lastly sprinkle top with crispy fried onions in centre dish and red Kerupuk crackers at side plate.๐Ÿ˜‹๐Ÿ˜™
