Meanwhile, prepare a mixture of cheese and vinegar chillies.
Now take chunks from this mixture stuffed cheese-chilli mixture into and shape it as per your choice.
Coat it well with roasted fox nut powder.
And deep fry them in hot oil till it gets nice golden colour.
For Salsa:- Roast guava slice.
Chopped it finely.
Mix it with sweet chilli sauce.
Your guava salsa is ready.
For Baba ghanoush:- Mark slit in the egg plant.
Stuff 4 garlic cloves and 2 green chilli in the slit and roast it perfectly.
Then allow it cool down a bit and remove it's skin.
Now put it in the blender, add hung curd, peanuts, remaining garlic cloves and chilli, coarsely ground peanuts ginger and coriander leaves in it and blend it into a smooth paste.
Now take it in a bowl, add salt and olive oil in it and mix it well.
For Tzatziki:- In a bowl take water drained grated cucumber, hung curd, roasted cumin powder, finely chopped ginger, garlic and coriander leaves and olive oil in it and mix it well.
Now serve falafel along with salsa, baba ghanoush, tzatziki and salad.
Let it come back to room. Grilled aubergine purée, tahini, lemon juice with bread (V, GF). Umi's mango sauce, tahini, tzatziki, garlic sauce, Umi's chilli sauce. I love Baba Ghanoush and this one was very good! I used more lemon juice than called for.
