  15. Take 1 tsp Garam masala powder -

Note - You may add a tbsp of beaten curd or cream after. Aloo Gobi Masala/Potato Cauliflower Curry Aloo Gobi Masala is a famous North Indian dish that goes well with rotis, parathas and rice varieties. Sauté well until onions turn translucent, then add ginger garlic paste, sauté well until raw smell goes, then add all the masala powder's mentioned under the heading above, except for Garam Masala, we can add that later.
  4. Add finely chopped tomatoes,salt to taste, mix well, turn the flame to medium-low flame, cover and cook until tomatoes turns mushy and well combined. Stir occasionally to avoid burning when covered.
  5. Now add the drained cauliflower florets, add enough water to cook the cauliflower. Mix well, cover and cook, stirring occasionally. When about half done, add boiled potatoes, Garam Masala. Mix well. Add some more water if the gravy is dry. I had water in which I boiled potatoes, so used it. Cook in medium low flame.
  6. Once cooked, add chopped cilantro/coriander leaves, taste for salt. Most of the potatoes would have been dissolved in the gravy which makes it thick. I like it that way. If you want them to be separate, add potatoes after the cauliflower is cooked to perfection. Also add very little water only if you feel the gravy is dry.
  7. Serve hot with any roti's.
