  17. Get Dry roast and grind
  18. Take 1 bay leaf
  19. Make ready 1 black cardamom
  20. Take 3 green cardamom
  21. Prepare 3 button chilli
  22. Prepare 1 tsp cumin
  23. Prepare 2 inch piece cinnamon
  24. Take 1 star anise
  25. Prepare 1/4 tsp Nut meg
  26. Take 1/4 tsp Mace
Steps to make Dum keema:
  1. Beef should be finely grounded and free of any water.
  2. Add papaya paste, garlic ginger paste, salt, chilli powder, garlic powder, whole spice powder, turmeric and coriander powder. - Mix well.
  3. Smoke ground beef with a piece of charcoal and set it aside for at least 1 hour.
  4. After 1 hour remove coal, mix all the other ingredients in mince beef.
  5. Marinate for at least 2 hours.
  6. Heat oil in a pan to shallow fry. - Make kababs of your desire shape. - Shallow fry on medium heat until done.
